A fun twist to the every day Chicken Cassrole...

I was introduced to this recipe by my cousins wife about 10 years ago!  SHE called it Chicken Florentine, so that is what we call it.  However, there is no spinach.  So, can it really be called Florentine?  For this blog, I renamed it a little...because, well...its basically Chicken Casserole!

 
It is soooo good!  Even the girls like it!  And, do you know what I like best about it?  Its Easy, and SUPER flexible!!  I am going to give you my recipe (even though I think it changes every time I make it...), but you can add/take away just about anything and it would still be delish!
 
Ingredients:
Boneless, Skinless Chicken Breast (~6 for a 9X13 dish.. Could always use more)
Cool Ranch Doritos (plain ones also work well)
Velveeta Cheese (1/2 bar)
Sharp Shredded Cheese (1/2 bag for top...sometimes I throw the rest of the bag in the crème mixture)
Cream of Mushroom (or chicken, your preference) Soup
Canned Milk (1/2 c)
Onion (1/2 chopped fine)
Green Pepper (1/2 chopped fine)
Butter (just used to sauté veggies)
Salt (to taste)
 
Optional:  Rotel, Tomatoes, Green Onions, Sliced Mushrooms, Chili Peppers, Etc. 
Again, this dish is VERY flexible!!
 
1.  Cook Chicken.  I usually just boil it.  You could grill it, bake it, etc.  Just cook it! :)
2. Cut/Shred the chicken into smaller pieces **to save time, shred chicken after step 4**
3.  Sautee veggies (onions, green peppers)
 
^I like mine super caramelized!!
 
4.  Add in liquids (Velveeta, Soup, Canned Milk...I usually throw in some shredded cheese here...)
**I used one can of soup, only 1/2 a bar of the small Velveeta cheese, and about 1/2 cup of milk**
 
 
While this is simmering, and after you add the chicken, prepare your casserole dish.
 
5.  Lightly spray 9X13 dish with cooking spray.  Line the dish with the Doritos of choice. 
 
^Pre kids, I used to make this step all pretty...Now, I just dump the bag! :)
 
6.  After the chicken/crème mixture has simmered about 5 minutes, spoon the mixture on the Doritos bed.  **Pouring moves the Doritos too much.  I like my dish to be completely lined without holes, so I always spoon**

 
6.  Top mixture with 1/2 bag of shredded cheese and some crushed Doritos!!
 
7.  Bake for about 30 minutes, at 350 degrees, until top is brown. 
 
**some Doritos might turn pretty dark...that makes them yummy! :)






Serve warm.  A salad, or any green veggie would work well as a side for this dish.  It is sooo good.  I promise you will like it!
